- 5 to 6 lb. hen
- 1 tsp. salt (optional)
- 2 stalks celery
- 2 Tbsp. butter
- 2 Tbsp. flour
- 1/4 tsp. pepper
- 1 c. milk
- 1 (4 oz.) can mushrooms, finely chopped
- 6 hard-cooked eggs, chopped
- 2 c. crushed buttery crackers
Directions

1Place chicken in Dutch oven; cover with water.

2Add 1 teaspoon salt and celery.

3Bring to a boil.

4Cover and simmer 45 minutes or until tender.

5Remove chicken and cool.

6Cool broth; remove fat. Skin and bone chicken; dice meat.
