  • 5 to 6 lb. hen
  • 1 tsp. salt (optional)
  • 2 stalks celery
  • 2 Tbsp. butter
  • 2 Tbsp. flour
  • 1/4 tsp. pepper
  • 1 c. milk
  • 1 (4 oz.) can mushrooms, finely chopped
  • 6 hard-cooked eggs, chopped
  • 2 c. crushed buttery crackers

    Place chicken in Dutch oven; cover with water.

    Add 1 teaspoon salt and celery.

    Bring to a boil.

    Cover and simmer 45 minutes or until tender.

    Remove chicken and cool.

    Cool broth; remove fat. Skin and bone chicken; dice meat.
