- 1 can each whole kernel and cream-style corn
- 2 eggs
- 1 box Jiffy corn muffin
- 1/2 c. chopped onion
- 1/4 c. margarine
- 1 c. sour cream
- 1 c. grated Cheddar
- salt and pepper to taste
Directions

1Saute onions in margarine.

2Beat eggs.

3Add corn, 1/2 of muffin mix and onion mixture.

4Put in greased casserole.

5Spread with sour cream.

6Sprinkle with cheese and dry muffin mix.

7Bake at 350° for 45 minutes.
