Escalloped Eggplant

Ingredients

  • 1 large eggplant, cubed
  • 1 medium onion, chopped
  • 1 tsp. salt
  • 1 1/2 c. cracker or bread crumbs
  • 3/4 c. whole milk
  • 1 Tbsp. margarine, melted
  • 1 egg, beaten
  • 1 c. Cheddar cheese, diced

Directions

    Boil eggplant, onion and salt until tender. Drain and add 1 cup crumbs, milk, margarine and egg. Mix lightly, but thoroughly. Add finely diced cheese.

    Pour into a buttered casserole dish and top with the remaining 1/2 cup crumbs which have been buttered. Bake in a 350° oven for 30 minutes or until lightly browned and heated through.
