Escalloped Oysters

  • 4 c. crushed saltine crackers
  • 1 tsp. chicken bouillon (granulated)
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1 qt. shucked oysters with liquor
  • 1/4 c. butter
  • 1 to 2 c. milk
  • parsley and paprika (for garnish)

Directions

    Mix saltines with chicken bouillon, salt and pepper.

    In a greased shallow 2-quart casserole, alternately layer cracker mixture and oysters with liquor, making the last layer cracker mix.

    Melt butter and add with enough milk to barely cover casserole.

    Sprinkle parsley and paprika over top.

    Bake at 350° until browned, 45 to 60 minutes.
