Escalloped Pineapple

  • 2 sticks butter or margarine
  • 1 c. sugar
  • 2 eggs
  • 1 (20 oz.) can pineapple chunks with juice
  • 1 qt. bread cubes (6 or 7 slices)
  • 1/2 c. milk

Directions

    Cream butter and sugar.

    Add eggs and beat well.

    Add pineapple juice and milk and mix well.

    Add pineapple chunks and bread cubes.

    Fold in carefully.

    Pour into 2-quart casserole dish and bake at 350° for 1 hour.

    Can be made ahead and put in refrigerator overnight.
