Ingredients

  • 1 head escarole roughly chopped
  • 1 cup extra-virgin olive oil
  • 1/2 pound black olives
  • 1 onion medium
  • 1/4 pound jack cheese Spicey Montery, medium sliced
  • 1/4 pound cheese Sharp provlone
  • 1/2 pound sausage Sweet
  • 1 tablespoon oregeno Fresh
  • 1/2 cup grated cheese Locatelli
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 whole wheat dough
  • 1 egg lightly beaten

Directions

    Saute 2 tablespoons of Extra virgin olive oil and onion until onion is lightly brown add escarole, olives, oregeno, salt and pepper cook for 15 minutes or until escarole is tender

    Remove from skillet. Brown Sausage in same pan add remaining olive oil when sausage is browned add the escarole mixture and add the locatelli grated cheese. Mix all together.

    Roll out whole wheat dough layer the cheese spread the mixture on top and roll the dough closed. Brush the lightly beaten egg on top and put in a 400 degree oven for 1/2 hour on the bottom rack after 15 minutes place on the middle rack. Remove when top and bottom are golden brown
