  • 2 cups corn kernels fresh or frozen
  • 2 tablespoons butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/4 cup green onion diced small, plus more for garnish
  • 1 teaspoon lime
  • 1 tablespoon cilantro chopped
  • 1 tablespoon mayonnaise
  • 1/4 cup queso fresco

Directions

    Melt the butter in a saute pan over medium heat. Add in the corn, salt, pepper and chili powder and saute for 3 minutes or until the corn is tender.

    Add in the green onion and lime and cook for 1 minute more while stirring.

    Remove the pan from the heat and add in the mayonnaise and cilantro. Taste and season with more salt and pepper if desired.

    Plate the corn in a bowl and top with the queso fresco and more green onions and serve warm.
