  • 4 whole Beets, Medium
  • 2 cloves Garlic, Chopped
  • 1 Tablespoon Raspberry Vinegar
  • 1 Tablespoon Honey
  • 5 Tablespoons Extra Virgin Olive Oil
  • 1/2 teaspoons Hot Paprika
  • 1 Tablespoon Chopped Flat Leaf Parsley

Directions

    Individually wrap the beets in foil and roast them in a 400-degree oven until tender, about an hour. Meanwhile, whisk all of the other ingredients together, except for the parsley. When the beets are cool, remove the skins, cube, and toss with the dressing. Add salt and pepper to taste and garnish with parsley.
