Fabulous Lamb Stew

Ingredients

  • 12 cups water
  • 3 lbs lamb, stew bones with some meat on them
  • 2 large marrow, bones
  • 1 large onion, diced
  • 6 stalks celery, diced
  • 4 large garlic cloves, minced
  • 1 large potato, small cubes
  • 1 cup navy beans, soaked in water over night
  • 28 ounces tomato puree
  • 28 ounces whole canned tomatoes, cut in quarters
  • 13 cup canola oil
  • salt and pepper

Directions

    In a large pot place the 12 cups of water, the lamb and marrow bones.

    Bring to a boil and then lower flame and simmer for 1 1/2 hours.

    In a separate pan saute the onion and celery in the canola oil for about 10 minutes.

    Then add the garlic and saute for a few more minutes.

    Set aside.

    After the bones have been simmering for 1 1/2 hours add the sauteed veggies plus the rest of the ingredients including the salt and pepper and simmer for 1 1/2 more hours.
