Ingredients

  • 1/2 c. olive oil
  • 1/4 c. red wine vinegar
  • 1/3 c. lime juice
  • 1/3 c. chopped onion
  • 1 tsp. sugar
  • 1 tsp. dried whole oregano
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1/4 tsp. ground cumin
  • 3 cloves minced garlic
  • 2 lb. skirt or flank steak
  • tortillas

    Pound steak to tenderize.

    Moisten with water.

    Sprinkle with Adolph's meat tenderizer.

    Jab with a fork.

    Wait a few minutes then add steak to marinade, coating each side.

    Cover and refrigerate overnight.

    Remove steak from marinade and drain well. Grill steak over medium coals 6 to 7 minutes on each side until done.

    Slice steak across the grain into thin slices.

    Serve with pico de gallo, guacamole, beans, lettuce and whatever else you like.
