- 1/2 c. olive oil
- 1/4 c. red wine vinegar
- 1/3 c. lime juice
- 1/3 c. chopped onion
- 1 tsp. sugar
- 1 tsp. dried whole oregano
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1/4 tsp. ground cumin
- 3 cloves minced garlic
- 2 lb. skirt or flank steak

Directions

1Pound steak to tenderize.

2Moisten with water.

3Sprinkle with Adolph's meat tenderizer.

4Jab with a fork.

5Wait a few minutes then add steak to marinade, coating each side.

6Cover and refrigerate overnight.

7Remove steak from marinade and drain well. Grill steak over medium coals 6 to 7 minutes on each side until done.

8Slice steak across the grain into thin slices.

9Serve with pico de gallo, guacamole, beans, lettuce and whatever else you like.
