- 1 lb. boneless, skinless chicken breasts
- 4 slices red onion, cut 1/4-inch thick
- 2 Tbsp. each; olive oil and lime juice
- 2 large bell peppers, halved
- 2 garlic cloves, minced
- 3/4 c. salsa
- 8 (7-inch) flour tortillas, heated
- 1 c. shredded mild Cheddar cheese
Directions

1Combine chicken, onion, olive oil, lime juice, peppers, garlic and salsa in sealed plastic bag.

2Marinate in refrigerator for 2 to 24 hours.

3Grill or broil chicken and vegetables from 4 to 5-inches from heat for 5 to 8 minutes per side while bringing marinade to a boil.

4Cut chicken and vegetables into thin strips. Divide among tortillas and drizzle with marinade.

5Sprinkle with Cheddar cheese.

6Roll up.
