Ingredients

  • 4 oz dried fava beans, soaked overnight, drained, rinsed
  • 4.5 oz dried chickpeas, soaked overnight, drained, rinsed
  • 3 tbsp fresh flat-leaf parsley leaves, coarsely chopped
  • 2 tbsp ground cumin
  • 2 tbsp ground coriander
  • 2 tsp salt
  • 1 tsp baking soda
  • 1 None small onion, finely chopped
  • 1 tbsp all-purpose flour
  • 1 None egg
  • None None vegetable oil, for deep-frying

Directions

    Bring a large pot of water to a boil. Add fava beans and bring back to a boil. Reduce heat and simmer, uncovered, for 5 mins. Drain.

    In a food processor, combine fava beans, chickpeas, parsley, cumin, coriander, salt, baking soda, onion, flour and egg. Process until almost smooth. Shape level tablespoons of mixture into patties and arrange on a baking tray. Cover and chill for 30 mins.

    Heat vegetable oil in a wok. Working in batches, deep-fry falafels until browned. Drain on paper towels.
