Ingredients

  • 3 oz couscous
  • 1/4 cup fresh mint, roughly chopped
  • 1/2 cup fresh parsley, roughly chopped
  • 2 tbsp preserved lemon rind, finely chopped
  • 1/3 cup extra virgin olive oil
  • 2 tbsp za'atar spice + extra, to sprinkle
  • 1 None shallot, finely sliced
  • 1/2 cup hummus
  • 4 None pitas, halved
  • 7 oz falafels
  • None None Sauce
  • 3/4 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tbsp tahini (sesame paste)
  • 1 clove garlic, minced

Directions

    Cover couscous in 1/2 cup boiling water. Cover and set aside for 5 mins. Fluff grains with fork to separate. Add herbs, preserved lemon, olive oil, za'atar spice and shallot. Season.

    Spread hummus over each pita. Fill with couscous and falafels. Combine all sauce ingredients then drizzle over pitas. Season.

    Serve sprinkled with extra za'atar spice.
