- 1 can (15 Oz. Size) Garbanzo Beans (Chickpeas), Drained
- 1 whole Onion, Chopped
- 1/2 cups Fresh Parsley
- 2 cloves Garlic, Chopped
- 1 Egg
- 2 teaspoons Ground Cumin
- 2 teaspoons Ground Coriander
- 1 teaspoon Salt
- 1 dash Pepper
- 1 pinch Cayenne Pepper
- 1 teaspoon Lemon Juice
- 1 teaspoon Baking Powder
- 1 Tablespoon Olive Oil
- 1 cup Dry Bread Crumbs
- Oil, For Frying
Directions

1In a large bowl mash chickpeas until thick and pasty.

2In a food processor, process onion, parsley and garlic until smooth.

3Stir into the mashed chickpeas.

4In a small bowl combine egg, cumin, coriander, salt, pepper, cayenne, lemon juice and baking powder.

5Stir into the chickpea mixture along with olive oil.

6Slowly add bread crumbs until mixture is not sticky but will hold together.

7Add more or less bread crumbs, as needed.

8Form the mixture into 8 balls.

9Heat 1 inch of oil in a large skillet over medium-high heat.

10Fry balls in hot oil until brown, flipping if needed.

11Dont crowd the panyou can do this in batches if needed.

12Remove them from the oil with a slotted spoon and place on a paper towel lined plate.

13They are the perfect snack, side dish or stuffed into a pita with lettuce, onion, tomato and cucumbers along with some yummy tzatziki sauce.
