  • 3 cups flour, all-purpose
  • 2 teaspoons baking powder
  • 1 teaspoon sea salt
  • 2 teaspoons pumpkin pie spice
  • 1 cup buttermilk
  • 1 cup pumpkin
  • 1/4 cup vegetable oil
  • 23 cup honey
  • 2 large eggs beaten

    Mix dry ingredients together in a large bowl.

    Mix liquid ingredients well.

    Add the liquid ingredients to the dry ingredients and mix just until the flour is moistened.

    Batter will be lumpy.

    Fill 24 well-greased muffin tins 23 full and bake at 400F (200C).

    Cool 10 minutes in pans or wire rack.

    Loosen muffins with a knife; invert onto wire racks.
