Ingredients
- 4 medium potatoes
- 2 to 3 Tbsp. melted butter
- 1 tsp. salt
- 2 to 3 Tbsp. chopped fresh herbs (parsley, chives, thyme, sage, etc.)
- 2 to 3 Tbsp. dried herbs of your choice
- 4 Tbsp. grated Cheddar cheese
- 1 1/2 Tbsp. Parmesan cheese
Directions

1Peel the potatoes if skins are tough, otherwise scrub.

2Cut potatoes into thin slices but not all the way through.

3Use handle of wooden spoon to prevent cutting all the way through.

4Put in baking dish and fan slightly.

5Sprinkle with salt.

6Drizzle with butter.

7Sprinkle with herbs.

8Bake potatoes at 425° for about 50 minutes.

9Remove from oven and sprinkle with cheeses.

10Bake for another 10 to 15 minutes until lightly browned and cheese is melted.
