  • 14 cup minced onion
  • 2 garlic cloves, minced
  • 1 tablespoon butter
  • 1 cup roasted green chilies, chopped (New Mexico or Ananheim)
  • 1 teaspoon salt
  • 1 cup grated mild cheddar cheese or 1 cup monterey jack cheese or 1 cup asadero cheese
  • 14 cup milk (whole, low-fat or non-fat)

Directions

    Saute onions and garlic in butter in a small saucepan until onion is soft.

    Add chopped green chiles and salt.

    Saute about 3 minutes more.

    Add cheese and milk.

    Stir until cheese is melted.
