Ingredients
- 1 c. (4 oz.) diced Canadian bacon or ham
- 1/4 c. chopped green onion
- 3 Tbsp. butter or oleo
- 12 beaten eggs
- 1 (3 oz.) can mushroom stems and pieces, drained
- 1 recipe cheese sauce
- 4 tsp. melted butter
- 2 1/4 c. soft bread crumbs (3 slices)
- 1/8 tsp. paprika
Directions

1In large skillet, cook bacon and onion in 3 tablespoons butter until onion is tender, but not brown.

2Add eggs and scramble just until set.

3Fold mushrooms and cooked eggs into the cheese sauce. Turn into 12 x 7 x 2-inch baking dish.

4Combine remaining butter, crumbs and paprika.

5Sprinkle on top of eggs.

6Cover.

7Chill until 30 minutes before serving.

8Bake, uncovered, for 30 minutes at 350°.
