  • 7 to 8 medium Russet potatoes
  • 1/2 c. melted butter
  • 1 c. half and half cream
  • 12 oz. medium Cheddar cheese

Directions

    Parboil or steam potatoes until almost cooked.

    Peel potatoes and grate.

    Put melted butter in an 8 x 8-inch pan and add grated potatoes.

    Pour half and half cream to cover bottom half of potatoes.

    Bake at 350° until the cream is absorbed by potatoes (approximately 45 minutes).

    Sprinkle grated Cheddar cheese on top and place back in oven until cheese is melted.

    Serve.
