  • 1 1/2 cups flour
  • 1 cup brown sugar
  • 2 teaspoons cinnamon
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup shredded zucchini
  • 1 cup chopped nuts, 1/2 cup raisins, or 1/2 cup chopped nuts plus 1/4 cup chopped dried fruit (optional)
  • 2 eggs, lightly beaten
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

    Preheat the oven to 350F.

    Grease a 9 by 5-inch loaf pan.

    In a large bowl, combine the flour, sugar, cinnamon, baking soda, baking powder, and salt.

    Add the zucchini and the nuts and/or dried fruit, if youre using them.

    Stir together until the ingredients are well distributed.

    In a small bowl, combine the eggs, oil, and vanilla.

    Add the wet ingredients to the dry ingredients and combine with a few gentle folding motions.

    Pour the batter into the prepared loaf pan and place in the middle of the oven.

    Bake until a toothpick inserted into the middle comes out clean, about 1 hour.

    Alternatively, this recipe can be made very quickly in a food processor.

    Dump everything into the bowl and process for 5 to 10 seconds.
