  • 2 large or 4 medium eggplant(sliced in 1/4 inch rounds)
  • 2 large or 4 small green pepper(sliced with seeds)
  • 2 onion(slice in 1/4 inch rounds)
  • 1 1/2 lb ground beef
  • 12oz can tomato sauce
  • salt and pepper

    ground beef and let cool

    to bottom of casserole dish layer slices of eggplant, green pepper and onion sprinkle with salt and pepper

    add 1/2 ground beef mixture

    continue with remaining layer of eggplant, green pepper, onion and ground beef, salt and pepper

    mix 1 can water with 12oz tomato sauce and pour over top

    cover with tin foil

    cook at 350 for 1 hour to 1 hour 10 mins

    chop with big spoon and serve over rice
