- 1/3 c. chopped onion
- 1/4 c. chopped green pepper
- 1/4 c. margarine or butter
- 1/2 (12 oz.) can chopped ham, cut in thin strips
- 2 medium potatoes, cooked, peeled and cubed
- 3/4 tsp. salt
- 6 beaten eggs
Directions

1In skillet, cook onion and green pepper in margarine until crisp-tender.

2Add ham, potatoes and 1/4 teaspoon salt; cook over medium heat for 10 minutes, stirring occasionally.

3Combine eggs, 2 tablespoons water, remaining salt and dash of pepper.

4Pour over ham mixture.

5Cook over low heat, turning occasionally, until eggs are set.

6Trim with parsley, if desired.

7Serves 6 people.
