- 1/3 c. chopped onion
- 1/4 c. chopped green pepper
- 2 Tbsp. cooking oil
- 2 c. cooked ham, cut in thin strips
- 1 (9 oz.) pkg. frozen French fried potatoes, partially thawed and chopped
- 4 beaten eggs
- 2 Tbsp. water
- 1/4 tsp. salt
Directions

1Cook onion and green pepper in oil until tender-crisp.

2Add ham and potatoes; cook until potatoes are tender.

3Combine eggs, water and salt; pour over ham mixture.

4Cook over low heat, turning occasionally, until eggs are set.
