  • 1/3 c. chopped onion
  • 1/4 c. chopped green pepper
  • 2 Tbsp. cooking oil
  • 2 c. cooked ham, cut in thin strips
  • 1 (9 oz.) pkg. frozen French fried potatoes, partially thawed and chopped
  • 4 beaten eggs
  • 2 Tbsp. water
  • 1/4 tsp. salt

Directions

    Cook onion and green pepper in oil until tender-crisp.

    Add ham and potatoes; cook until potatoes are tender.

    Combine eggs, water and salt; pour over ham mixture.

    Cook over low heat, turning occasionally, until eggs are set.
