- 3 potatoes
- 1 onion
- 1 slice bacon
- 12 pepper
- 1 ounce cheese
- little oil
- knob butter
- 1 egg
Directions

1Slice and dice the potatoes.

2Peel and chop the onion.

3De-rind and dice the bacon.

4Core and chop the pepper.

5Grate the cheese.

6Heat the oil in a frying pan, add the bacon, and fry gently for 3-4 minutes.

7Remove the bacon from the pan and save on a saucer.

8Put the potatoes, onion and green pepper into the hot fat in the pan, and continue to fry gently for 5-10 minutes, until lightly browned.

9Mix the bacon with the vegetables and place in an ovenproof dish.

10Melt the butter in the pan and fry the eggs.

11Carefully put the eggs on top of the vegetables and bacon.

12Cover with the grated cheese, and brown for a few minutes under a hot grill, until the cheese is bubbly.
