- 1 tablespoon vegetable oil
- 1/2 large white onion, chopped
- 1 medium carrot, chopped
- 1 bell pepper, chopped
- 2 garlic cloves, minced
- 1 1/2 cups store-bought marinara sauce
- 3/4 cup water
- 4 1/4 ounces ricotta cheese (1/2 cup)
- 1 egg
- 1 ounce cream cheese (2 tablespoons)
- 1/2 teaspoon Dijon mustard
- 1/4 teaspoon sea salt
- 1/4 teaspoon freshly ground pepper
- 8 lasagna noodles
- 1 ounce Parmigiano-Reggiano cheese, grated
Directions

1Preheat the oven to 425.

2In a medium frying pan, heat the vegetable oil over medium high heat.

3Add the onion and cook for 5 minutes, until it is soft and starting to brown.

4Add the carrot, bell pepper and garlic and cook for 5 minutes.

5Stir in the marinara sauce and water.

6In a medium bowl, whisk together the ricotta, egg, cream cheese, Dijon mustard, sea salt and freshly ground pepper.

7In an 8-inch-square baking dish, spread 1/3 cup of the marinara sauce and top with 4 lasagna noodles, overlapping them a little.

8Pour half of the remaining marinara sauce over the noodles and cover with half of the ricotta.

9Arrange the rest of the noodles on top, and cover with the remaining marinara sauce and ricotta.

10Top with the Parmigiano-Reggiano cheese and cover the baking dish with aluminum foil.

11Bake for 20 minutes then remove the foil and bake for 15 minutes, until the noodles are soft and the lasagna is bubbling and hot.

12Remove from the oven and let it sit for 10 minutes before serving.
