Rice Soy Dish

Ingredients
- 1 teaspoon salt
- 3 1/4 - 3 1/2 cups boiling water
- 1 cup uncooked extra long grain white rice
- 1 lb 95% lean ground beef
- 2 cups chopped celery
- 1 (4 ounce) can mushrooms (drained net weight)
- 3 medium onions, chopped (I used 1 very large Vidalia onion)
- 3 tablespoons soy sauce
Directions

1Add salt to water and bring to a rolling boil.

2Add rice, then turn off heat and let stand while preparing the rest of ingredients.

3Cook ground beef with celery and onions in a large skillet. When beef is almost fully cooked, add mushrooms. Drain fat.

4In a 2 quart casserole dish, combine hamburger mixture, rice with water and soy sauce and bake in 325 degree oven covered for 1 hour.

5Uncover and bake an additional 1/2 hour or until fully cooked.
