Ingredients
- 2 eggs
- 1 mushroom, sliced
- 2 tablespoons bell peppers, chopped
- 1 green onion
- 14 cup spinach
- salt
- pepper
Directions

1Whisk eggs together until frothy.

2Pour eggs into a small fry pan sprayed with cooking spray.

3Cook on medium heat until the eggs start to turn white on the bottom.

4Gently lay veggies on one half of the eggs.

5Cook until the eggs are almost solid.

6Using a spatual, gently fold the side of the omelette with out the veggies on top of the other side.

7Continue cooking until the eggs are completely cooked.

8Serve hot.
