- 2 c. self-rising flour
- 2 eggs
- milk as needed (to achieve desired texture)
- 3/4 c. applesauce
- 1/2 tsp. cinnamon
- 3/4 c. blueberries
Directions

1Using mixer on lowest setting, combine flour, eggs, milk and applesauce.

2Once all the ingredients are moist, increase speed of mixer.

3Add cinnamon and mix thoroughly.

4Add blueberries last and hand-stir only, to ensure berries are intact.

5Spray frying surface with Pam and cook slowly to ensure centers are well cooked. Topping is your choice.
