Ingredients
- 3 medium tomatoes, cut in wedges
- 3 pita breads
- 4 c. romaine lettuce, cut into 1-inch strips
- 2 c. sliced cucumber
- 1/2 c. crumbled Feta cheese
- 1/4 c. red onion, sliced and quartered
- 3/4 c. vinaigrette salad dressing
- 1 Tbsp. chopped flat leaf parsley
- 2 tsp. dried mint leaves, crushed
Directions

1Cut pita breads into halves.

2Cut each half into 8 wedges. Place on a shallow baking pan.

3Bake until crisp, turning occasionally, about 25 minutes.

4Remove from pan and cool.

5In a large bowl, combine lettuce, cucumber, Feta cheese, onion, tomatoes and pita wedges.

6Mix vinaigrette dressing, parsley and mint.

7Pour over salad mixture and toss.

8Serves 4 to 6.
