Ingredients

  • 3 medium tomatoes, cut in wedges
  • 3 pita breads
  • 4 c. romaine lettuce, cut into 1-inch strips
  • 2 c. sliced cucumber
  • 1/2 c. crumbled Feta cheese
  • 1/4 c. red onion, sliced and quartered
  • 3/4 c. vinaigrette salad dressing
  • 1 Tbsp. chopped flat leaf parsley
  • 2 tsp. dried mint leaves, crushed

Directions

    Cut pita breads into halves.

    Cut each half into 8 wedges. Place on a shallow baking pan.

    Bake until crisp, turning occasionally, about 25 minutes.

    Remove from pan and cool.

    In a large bowl, combine lettuce, cucumber, Feta cheese, onion, tomatoes and pita wedges.

    Mix vinaigrette dressing, parsley and mint.

    Pour over salad mixture and toss.

    Serves 4 to 6.
