Fava Bean Dip

- 1 lb frozen fava beans
- 1 clove garlic
- 1 tbsp lemon juice
- 1/4 cup extra-virgin olive oil
- None None Toasted baguette halves, to serve
- None None Sun-dried tomatoes, to serve
- None None Basil, to serve
Directions

1Cook beans for 2 minutes in boiling salted water. Drain, refresh in ice-cold water and drain again. Remove and discard skins.

2Place beans, garlic, lemon juice and olive oil in a food processor. Pulse to a coarse paste. Season to taste.

3Serve dip with toasted baguette, basil and sun-dried tomatoes.
