Fava Bean Dip

  • 1 lb frozen fava beans
  • 1 clove garlic
  • 1 tbsp lemon juice
  • 1/4 cup extra-virgin olive oil
  • None None Toasted baguette halves, to serve
  • None None Sun-dried tomatoes, to serve
  • None None Basil, to serve

Directions

    Cook beans for 2 minutes in boiling salted water. Drain, refresh in ice-cold water and drain again. Remove and discard skins.

    Place beans, garlic, lemon juice and olive oil in a food processor. Pulse to a coarse paste. Season to taste.

    Serve dip with toasted baguette, basil and sun-dried tomatoes.
