  • 2 lb. ground round or chuck
  • 2 large onions, chopped
  • 1 can yellow corn
  • 1 can mild Ro-Tel tomatoes
  • 2 c. shredded Cheddar cheese (no fat)
  • 2 c. shredded extra sharp Cheddar cheese
  • 1 c. ketchup
  • 1 bag large shell macaroni, cooked and drained

Directions

    Brown meat and onions until done. Cook macaroni in a large pot. Drain and add meat mixture and all other ingredients, reserving 1 cup of shredded extra sharp cheese. Pour into a large Pyrex dish and sprinkle top with remaining cup of cheese. Bake in preheated 350° oven for 30 minutes.
