  • 2 tsp. olive oil
  • 1 c. broccoli florets
  • 2 medium tomatoes, chopped, or 1/2 c. chopped canned tomatoes
  • 1/2 c. yellow squash, cut
  • 1/2 c. carrots, cut
  • 2 cloves minced garlic
  • 1/2 c. low salt chicken broth
  • 1 Tbsp. parsley
  • 1/2 tsp. basil
  • 2 c. pasta, cooked
  • 1 Tbsp. Parmesan cheese

    In skillet, heat oil.

    Add broccoli, tomatoes, squash, carrots and garlic.

    Cook on medium-high heat 1 to 2 minutes.

    Add broth, parsley and basil.

    Reduce heat and cover.

    Cook on low heat about 5 minutes.

    Add pasta.

    Sprinkle with cheese.
