Ingredients

  • 3/4 c. self-rising flour
  • 1/4 c. self-rising cornmeal
  • 2 Tbsp. onion, minced (optional)
  • 1 Tbsp. sugar
  • 1 Tbsp. mustard
  • 1/2 c. milk
  • 1 egg, beaten
  • 1 lb. frankfurters

Directions

    Combine flour, cornmeal, onion, sugar and mustard; stir well. Combine milk and eggs.

    Add dry ingredients, stirring well.

    Set aside.

    Wipe each frankfurter dry and insert a wooden stick into one end.

    Dip frankfurter in batter.

    Fry in deep, hot oil at 375° for 2 to 3 minutes or until brown, turning once.

    Drain well on paper towels.

    Repeat with remaining frankfurters.
