  • 1 1/2 c. cooking oil
  • 2 c. sugar
  • 2 tsp. cinnamon
  • 2 tsp. vanilla
  • 1 tsp. salt
  • 4 eggs
  • 2 1/4 c. flour
  • 2 tsp. soda
  • 1 (8 oz.) can crushed pineapple
  • 2 c. shredded coconut
  • 2 c. grated carrots
  • 1 c. nuts, cut fine

    Combine first 5 ingredients.

    Blend well.

    Add eggs; beat well.

    Add flour, soda and pineapple.

    With large spoon, fold in carrots, coconut and nuts.

    Bake in 9 x 13-inch pan at 325° for 1 hour.
