- 2 c. sugar
- 2 tsp. cinnamon
- 2 tsp. vanilla
- 1 tsp. salt
- 4 eggs
- 2 1/4 c. flour
- 2 tsp. soda
- 1 (8 oz.) can crushed pineapple
- 2 c. shredded coconut
- 2 c. grated carrots
- 1 c. nuts, cut fine
Directions

1Combine first 5 ingredients.

2Blend well.

3Add eggs; beat well.

4Add flour, soda and pineapple.

5With large spoon, fold in carrots, coconut and nuts.

6Blend well.

7Bake in 9 x 13-inch pan at 325° for 1 hour.
