  • 150 g full-fat natural yogurt
  • 4 tbsp mayonnaise
  • None None Dash of lemon juice
  • 300 g can mandarin segments, drained, juice reserved
  • 15 g fresh dill, chopped, plus extra for garnish
  • 200 g cooked and peeled prawns
  • 1/4 None iceberg lettuce, cut into thin strips
  • None None Lemon wedges, for garnish

Directions

    In a bowl, mix the yogurt, mayonnaise, lemon juice and 2 tbsp mandarin juice. Season with salt and black pepper. Stir in the dill. Mix the mandarin segments, prawns, lettuce and dressing and spoon into 4 cocktail glasses. Garnish with dill and lemon wedges.
