Festive Syrian Rice

  • 2 c. dried apricots
  • 1 c. raisins
  • 2 c. rice
  • 1/2 c. margarine or butter
  • 1 c. onion, minced
  • 1/2 c. green pepper, chopped
  • 1/2 tsp. curry
  • 1 c. blanched, toasted almonds

Directions

    Soak apricots and raisins in water for 1/2 hour.

    Cook rice according to directions.

    Preheat oven to 375°.

    Grease a baking dish.

    In a skillet, melt the margarine and saute the onion, green pepper and curry, until the vegetables are soft but not browned. Add the almonds to the skillet.

    Drain and chop the apricots.

    Mix the rice, apricots and raisins with the sauteed vegetables.

    Place the mixture in the greased baking dish and bake in oven for 30 minutes.
