- 2 c. dried apricots
- 1 c. raisins
- 2 c. rice
- 1/2 c. margarine or butter
- 1 c. onion, minced
- 1/2 c. green pepper, chopped
- 1/2 tsp. curry
- 1 c. blanched, toasted almonds
Directions

1Soak apricots and raisins in water for 1/2 hour.

2Cook rice according to directions.

3Preheat oven to 375°.

4Grease a baking dish.

5In a skillet, melt the margarine and saute the onion, green pepper and curry, until the vegetables are soft but not browned. Add the almonds to the skillet.

6Drain and chop the apricots.

7Mix the rice, apricots and raisins with the sauteed vegetables.

8Place the mixture in the greased baking dish and bake in oven for 30 minutes.
