- 2 1/2 c. all-purpose flour
- 1 c. sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/2 tsp. salt
- 3 beaten eggs
- 1/2 c. cooking oil
- 1/2 c. milk
- 2 c. shredded carrot
- 1 (3 1/2 oz.) can flaked coconut (1 1/3 c.)
- 1/2 c. chopped maraschino cherries
- 1/2 c. raisins
- 1/2 c. chopped pecans
Directions

1Stir together thoroughly all-purpose flour, sugar, baking powder, baking soda, cinnamon and salt.

2Combine eggs, oil and milk; add to the flour mixture and stir just until blended.

3Stir in shredded carrot, coconut, maraschino cherries, raisins and pecans.

4Turn into 4 well-greased and floured 16 ounce fruit or vegetable cans.

5Bake at 350° for 45 to 50 minutes.

6Remove from cans; cool thoroughly on rack.

7Wrap in foil; store in refrigerator.

8Makes 4 small loaves.
