- 1 (12 oz.) pkg. fettuccine
- 1 Tbsp. oil
- 2 c. sliced zucchini
- 1 c. red pepper strips
- 1 c. green pepper strips
- 2 cloves garlic, minced
- 1 c. whipping cream or 1 c. evaporated skim milk
- 1 tsp. basil
- 1 tsp. oregano
- 1/2 tsp. salt
- 1/4 tsp. pepper
Directions

1Cook fettuccine; drain.

2Meanwhile, in large skillet, heat oil.

3Add zucchini, red and green pepper strips and garlic. Saute just until vegetables are tender.

4Blend in cream.

5Stir in Parmesan cheese and seasonings.

6Heat through until slightly thickened, but do not boil.

7Toss with hot cooked fettuccine. Makes 6 servings.
