  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1 tablespoon olive oil
  • 12 cup water
  • 14 teaspoon harissa
  • 12 teaspoon cumin
  • 14 teaspoon dried thyme
  • salt & pepper (to taste)

Directions

    cut salsify roots in half & boil in salted water for 30 minuites.

    rinse in cold water.
  3. 3
    peel & cut into 3 inch pieces.
  4. 4
    make the batter:blend all the indgredents in a food processor for 30 seconds.

    heat the oil in a large frying pan.
  6. 6
    dip the salsify in the batter and fry in oil until crisp & golden turning.
  7. 7
    keep warm whil cooking the remainder.
  8. 8
    serve hot with lemon wedges.
