  • 2 tablespoons fresh lemon juice
  • 1 tablespoon chopped fresh flat-leaf parsley
  • 1 teaspoon chopped fresh cilantro
  • 1 teaspoon dried crushed red pepper
  • 1 green onion (white and light green parts only), thinly sliced
  • 1 pound fresh green beans or haricots verts, trimmed
  • 2 tablespoons olive oil
  • Kosher salt
  • Freshly ground black pepper

    Preheat oven to 375°. Stir together first 5 ingredients. Arrange green beans in a single layer on an aluminum foil-lined baking sheet. Drizzle with olive oil; toss. Bake 10 minutes. Increase oven temperature to broil, and broil 4 to 6 minutes or until browned in spots and crisp-tender. Remove from oven. Drizzle beans with lemon juice mixture; toss. Season to taste with kosher salt and freshly ground black pepper. Serve hot, or cool completely, chill, and serve cold. These just get better as they sit.
