Ingredients

  • 1 1/2 c. finely crushed tortilla chips
  • 1/4 c. butter or margarine, melted
  • 2 (8 oz.) pkg. cream cheese, softened
  • 1 (3 oz.) pkg. cream cheese, softened
  • 2 large eggs
  • 2 1/2 c. shredded Monterey Jack cheese with peppers
  • 1 (4 oz.) can chopped green chilies, drained
  • 1/4 tsp. ground red pepper
  • 1 (8 oz.) sour cream
  • 1/2 c. each sweet red pepper, sweet green pepper and sweet yellow pepper, all chopped
  • 1/2 c. chopped green onions
  • 1 medium tomato, chopped
  • 2 Tbsp. chopped olives
  • 2 bunches fresh cilantro or parsley

Directions

    Combine chips and butter and press in bottom of greased 9-inch spring-form pan.

    Bake at 325° for 15 minutes.

    Cool on wire rack. Beat cream cheese until fluffy; add eggs, one at a time.

    Stir in shredded cheese, chilies and peppers.

    Pour in pan and bake at 325° for 30 minutes.

    Cool 10 minutes on rack.

    Spread with sour cream and chill.

    Arrange remaining ingredients on top and place on bed of fresh cilantro. Serve with tortilla chips.
