- 1 egg
- 1 cup cooked beans (garbanzo, lima, blacked i-eyed peas, kidney)
- 1 tablespoon unsweetened salsa
- 1 tablespoon fresh herb
- 1 teaspoon toasted nuts
Directions

1Preheat oven to 275.

2Place entire egg -- including shell -- in a muffin tin.

3Place in oven for 15 minutes.

4Puree the cook beans as well as their liquid for five (5) seconds in a blender.

5Consistency of this should be chunky.

6Salt and pepper to taste.

7Scoop beans into heat-proof dish.

8Remove egg from oven when it's done.

9Place beans in oven for approximately seven (7) to ten (10).

10Remove beans from oven, scoop egg from shell.

11Season if desired.
