Fiesta Rice for a Crowd

Ingredients

  • 2 cups onions chopped
  • 1/4 cup butter or margarine
  • 4 cups long grain rice uncooked
  • 2 cans olives ripe, pitted, drained
  • 28 ounce tomatoes, canned with liquid, cut up
  • 1 cup green bell peppers chopped
  • 1 tablespoon salt
  • 1 teaspoon chili powder
  • 1 teaspoon oregano dried
  • 1/2 teaspoon black pepper
  • 4 cups water
  • 3 cups cheddar cheese shredded

Directions

    In a large skillet over medium heat, saute the onion in butter until tender.

    Transfer to a large bowl.

    Stir in the next eight ingredients.

    Divide between 2 ungreased 13x9x2 inch baking pans.

    Stir 2 cups of water into each pan.

    Cover and bake at 350F (180C).

    for 1 1/2 hours.

    Uncover, sprinkle with cheese.

    Return to the oven for 5 to 10 minutes or until cheese melts.
