- 2 cups onions chopped
- 1/4 cup butter or margarine
- 4 cups long grain rice uncooked
- 2 cans olives ripe, pitted, drained
- 28 ounce tomatoes, canned with liquid, cut up
- 1 cup green bell peppers chopped
- 1 tablespoon salt
- 1 teaspoon chili powder
- 1 teaspoon oregano dried
- 1/2 teaspoon black pepper
- 4 cups water
- 3 cups cheddar cheese shredded
Directions

1In a large skillet over medium heat, saute the onion in butter until tender.

2Transfer to a large bowl.

3Stir in the next eight ingredients.

4Divide between 2 ungreased 13x9x2 inch baking pans.

5Stir 2 cups of water into each pan.

6Cover and bake at 350F (180C).

7for 1 1/2 hours.

8Uncover, sprinkle with cheese.

9Return to the oven for 5 to 10 minutes or until cheese melts.
