Fiesta Stuffed Shells

  • 24 whole Jumbo Shells
  • 1 pound Ground Beef
  • 8 ounces, weight Cream Cheese
  • 1 can (15 Oz. Size) Corn
  • 1 can (15 Oz. Size) Black Beans
  • 1/2 teaspoons Chili Powder
  • 1/4 teaspoons Cayenne Pepper
  • 1/4 teaspoons Garlic Powder
  • 1 dash Salt And Pepper
  • 1 cup Salsa
  • 1 cup Marinara Sauce
  • 1 can (2.25 Oz. Size) Black Olives
  • 2 whole Medium Tomatoes
  • 1/2 cups Colby And Monterey Jack Cheese, Shredded

Directions

    Cook jumbo shells according to package instructions.

    Drain and set aside.

    In a saucepan over medium high heat, brown the ground beef.

    Drain excess fat.

    Add cream cheese and mix well until melted.

    Turn down the heat to low and add the corn, black beans, chili powder, cayenne, garlic powder, salt, and pepper.

    In a bowl mix together the salsa and marinara sauce.

    Grease a 9x13in baking dish and cover the bottom with 1/2 cup of the sauce.

    Stuff each shell with the beef mixture and place in the baking dish.

    Top with remaining sauce.

    Bake at 350 degrees F covered for 20 minutes.

    Uncover and top with black olives, tomatoes, and cheese.

    Bake, uncovered, for 5 more minutes.

    Serve with sour cream.
