- 8 c. chopped figs
- 6 c. sugar
- 3/4 c. water
- 1/4 c. lemon juice
Directions

1Pour boiling water over figs to cover; let stand for 10 minutes.

2Drain, stem and chop figs.

3Add sugar and 3/4 cup water. Slowly bring to a boil, stirring often until sugar dissolves. Cook rapidly until thick.

4Stir frequently to prevent sticking. Add lemon juice and cook for 1 minute longer.

5Pour hot jam into hot jars, leaving 1/4-inch headspace.

6Seal at once.
