- 3 qt. figs
- 3 qt. boiling water
- lemon juice, orange peel or candied ginger
Directions

1Boil figs in water.

2Let stand 15 minutes.

3Drain and rinse thoroughly in clear, cold water.

4Dry figs, getting out as much water as possible.

5Pick off stems.

6Crush figs and measure. Measure 1/2 amount of figs in sugar (1/2 cup of sugar to 1 cup figs).

7Mix sugar and figs and just enough water to start boiling. Add a small amount of lemon juice, orange peel or ginger.

8Boil until thick.

9Watch carefully so it doesn't burn.

10Seal in jars.
