Ingredients
- 4 qt. firm ripe figs
- 2 qt. water
- 3 c. vinegar
- 1 Tbsp. whole allspice
- 3 c. sugar
- 2 c. sugar
- 1 Tbsp. whole cloves
- 2 sticks cinnamon
Directions

1Peel figs (if unpeeled are preferred, pour boiling water over figs and let stand until cool; drain).

2Add 3 cups sugar to water and cook until sugar dissolves.

3Add figs and cook slowly for 30 minutes.

4Add 2 cups sugar and vinegar.

5Tie spices in a cheesecloth bag.

6Add to figs; cook gently until figs are clear. Cover and let stand, 12 to 24 hours in a cool place.

7Remove spice bag.

8Heat to simmering.

9Pack hot into hot jars, leaving 1/4-inch space at top.

10Adjust caps.

11Process pints and quarts 10 minutes in boiling water bath.
