- 6 lb. figs (after sorting)
- 4 1/2 lb. sugar
- rind and juice of 1 lemon
- soda
Directions

1Sort figs to use those of even ripeness.

2Sprinkle soda over figs.

3Cover with boiling water and let stand about 15 minutes. Drain and rinse well, the last time, in warm water.

4Dissolve sugar in cup of water.

5Add figs and lemon and cook slowly (simmer), partly covered (wipe moisture from lid) until clear.

6Resterilize jars.

7Process 20 minutes in hot water.
