Finnish Summer Soup

Ingredients

  • 2 c. water
  • 4 to 6 potatoes, peeled and halved
  • 6 small boiling onions or 6 green onions, cut in 3-inch pieces
  • 12 very small carrots
  • 1/2 lb. fresh green beans
  • 2 tsp. garlic powder
  • 1 to 2 tsp. basil (optional)
  • 2 Tbsp. margarine
  • 2 c. fresh peas or 10 oz. frozen
  • 2 c. skimmed evaporated milk
  • 3 Tbsp. all-purpose flour
  • salt to taste (optional)

Directions

    Heat water to boiling in 5-quart pan.

    Add potatoes.

    Reduce heat.

    Cover and simmer for 5 to 8 minutes.

    Add onions, carrots, green beans and garlic powder.

    Add basil, if desired.

    Add margarine; simmer for 8 to 10 minutes more.

    Add peas and cook for 2 to 4 minutes or until they are crisp-tender.
