- 4 medium russet baking potatoes, baked and cooled
- 2 to 3 Tbs. vegetable oil
- 1 cup finely chopped onion
- 1/2 tsp. paprika or mild chili powder
- 1/2 cup prepared salsa
- 13 cup low-fat sour cream
- 1/4 to 13 cup sliced pickled jalapeno peppers, drained
- 1 to 1 1/2 cups grated pepper Jack cheese
Directions

1Preheat oven to 400F.

2Cut potatoes into large, bite-size pieces, and set aside.

3In large, ovenproof skillet, heat 2 Tbs.

4oil over medium heat.

5Add onion, and cook, stirring often, until softened, 5 minutes.

6Add remaining oil and potatoes, and cook, stirring often, until heated through, about 5 minutes.

7Season with salt to taste.

8Sprinkle with paprika and cook, stirring often, 1 minute.

9Remove pan from heat.

10Spoon salsa, then sour cream, over potatoes.

11Sprinkle with jalapenos and cheese.

12Bake potatoes in skillet until cheese is melted, 5 to 7 minutes.

13Serve right from skillet.
